The Fantastic Harmony of Cod Fish and Aged Kimchi: Cod Fish and Aged Kimchi Stew
Due to the scorching heat, the prices of vegetables have skyrocketed. Traditionally, this dish is made with cod fish and refreshing radish, but the price of radish is just too high! So, after much thought, I decided to try making a cod fish stew using aged kimchi from my kimchi refrigerator. You know what? You don’t even need radish! This stew boasts an explosion of savory flavor and a deep, rich aroma without it. Get ready to discover this special recipe that’s guaranteed to be a rice thief!
Main Ingredients- 1 large dried pollack (Cod fish)
- 1/2 head of aged napa cabbage kimchi
- 1 piece of radish from the aged kimchi (optional)
- 1 Tbsp mayonnaise
- 1/2 onion
- 1 red chili pepper
- 1 green chili pepper
- 1 stalk of green onion
- 2 cups kelp broth
Seasoning Ingredients- 1 Tbsp sugar
- 1 Tbsp perilla oil
- 3 Tbsp red pepper flakes
- 2 Tbsp soy sauce
- 3 Tbsp rice wine (mirin)
- 1 Tbsp minced garlic
- 1 Tbsp anchovy sauce
- 1/2 tsp minced ginger
- A pinch of sesame seeds
- 1 Tbsp sugar
- 1 Tbsp perilla oil
- 3 Tbsp red pepper flakes
- 2 Tbsp soy sauce
- 3 Tbsp rice wine (mirin)
- 1 Tbsp minced garlic
- 1 Tbsp anchovy sauce
- 1/2 tsp minced ginger
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare the vegetables. Slice the onion into large pieces. Cut the white part of the green onion into large pieces and the green part diagonally. Slice the red and green chili peppers diagonally. Rinse the aged napa cabbage kimchi and cut it into bite-sized pieces. (If there’s radish from within the aged kimchi, rinse it along with the kimchi and use it together for extra flavor!)
Step 2
In a bowl, place the prepared aged kimchi. Add 1 Tbsp of sugar and 1 Tbsp of perilla oil and mix well by hand. This step softens the tartness of the aged kimchi and deepens its flavor significantly.
Step 3
Next, it’s time to prepare the cod fish. Use scissors to cleanly trim off the fins, tail, and any other rough parts of the cod fish. Then, cut it into 4 equal portions, making them easy to stew.
Step 4
Spread the seasoned aged kimchi evenly on the bottom of a wide pot. Place the prepared cod fish pieces neatly on top of the kimchi. Then, generously spread 1 Tbsp of mayonnaise on both sides of the cod fish. Mayonnaise helps to eliminate any fishy odor and adds a tender texture.
Step 5
Now, let’s make the sauce! Add the large-sliced onion and the white part of the green onion on top of the cod fish. Pour in 2 cups of kelp broth. In a separate bowl, mix together 3 Tbsp red pepper flakes, 2 Tbsp soy sauce, 3 Tbsp rice wine (mirin), 1 Tbsp minced garlic, 1/2 tsp minced ginger, and 1 Tbsp anchovy sauce. Pour this mixture evenly over the ingredients in the pot. Cover the pot and simmer over medium heat for about 20 minutes until the stew thickens slightly. Spooning some of the broth over the fish occasionally will help the flavors meld beautifully.
Step 6
Once the broth has reduced to a rich consistency and the cod fish is thoroughly cooked, arrange the diagonally sliced green parts of the green onion, red chili pepper, and green chili pepper attractively on top. Finally, sprinkle a pinch of sesame seeds for a nutty aroma. Your delicious Cod Fish and Aged Kimchi Stew is now ready! Enjoy it with a hot bowl of rice.
