Spicy and Deep Flavored Braised Kimchi Recipe (Sumi’s Side Dishes Application)

I often make green onion kimchi at home, and while thinking about how to use up leftover aged kimchi, I was inspired by the ‘Sumi’s Side Dishes’ Season 2 recipe for braised aged kimchi. You can make a deeply flavorful braised aged kimchi using just the ingredients you have. Follow along right now!
Main Ingredients
- Aged Kimchi (or Green Onion Kimchi) 2 handfuls
- Dried Anchovies 20 pieces
Cooking Instructions
Step 1
Gently rinse the aged kimchi under running water to remove some of the excess seasoning. Then, soak it in fresh water, changing the water daily for 3 days. This process helps to moderate the sourness and soften the kimchi.
Step 2
In a large pot, add 2L of water and bring it to a rolling boil over high heat. Once the water is boiling, proceed to the next step.
Step 3
Add the prepared aged kimchi to the boiling water. Drizzle in 6 Tbsp of olive oil. Cover the pot with a lid and let it simmer vigorously over high heat for about 30 minutes until the kimchi becomes tender. This step helps to mellow out the sourness and enhance its savory flavors.
Step 4
Prepare an anchovy pack by placing 20 dried anchovies into a mesh bag or cheesecloth. This will create a clean-tasting broth without any fishy odor.
Step 5
Add the prepared anchovy pack to the simmering kimchi in the pot and continue to boil for another 10 minutes. The anchovy broth will infuse into the kimchi, adding a richer depth of flavor.
Step 6
After 10 minutes, remove the anchovy pack. Season the kimchi with 5 Tbsp of minced garlic and 3 Tbsp of soy sauce. Then, reduce the heat to low and let it simmer gently for another 20 minutes, allowing the kimchi and seasonings to meld together completely.
Step 7
Finally, drizzle 1 Tbsp of sesame oil and sprinkle 2 Tbsp of toasted sesame seeds over the finished braised kimchi. This adapted version, inspired by Chef Sumi’s recipe, will be wonderfully special and delicious! Enjoy it with a warm bowl of rice.
