Kimchi Stew Ingredients

  • 1/2 head of aged kimchi (fermented napa cabbage kimchi)
  • 400g whole pork belly
  • 2/3 stalk of green onion
  • 1 Tbsp minced garlic
  • A pinch of minced ginger (optional)
  • 1 Tbsp sugar
  • 1/2 Tbsp Korean chili flakes (gochugaru, adjust to spice preference)
  • 5-6 cups anchovy broth
  • 1 Tbsp anchovy sauce (fish sauce)

First, prepare the aged kimchi, which is key to the stew’s flavor. Cut the napa cabbage kimchi into bite-sized pieces. Layer the cut kimchi at the bottom of a pot. Then, add the whole 400g of pork belly on top. Layering the kimchi and pork belly together will yield a deeper flavor.

Now it’s time to add the broth and simmer. Pour 5 cups of anchovy broth into the pot and bring it to a boil over high heat. Once the broth is boiling vigorously, reduce the heat to medium or low. During the simmering process, add 1 tablespoon of sugar and 1 tablespoon of minced garlic to enhance the flavor, and mix well. It’s important to simmer on low heat to allow the flavors of the kimchi and pork belly to fully meld.
