  • Well-fermented Kimchi 300-400g
  • Canned Saury 2 cans
  • Green Onion 1/2 stalk
  • Cheongyang Pepper (Korean chili pepper) 2 pcs

Seasoning & Broth

  • Gochugaru (Korean chili flakes) 1 tsp
  • Minced Garlic 1 Tbsp
  • Black Pepper a pinch
  • Sugar 1 tsp
  • Fish Sauce or Soy Sauce for seasoning (optional)
  • Water or Anchovy-Kelp Broth (enough to cover kimchi)

Cooking Instructions

First, cut the well-fermented kimchi into bite-sized pieces and place them in a pot. Carefully open the canned saury, drain out the liquid completely, and add only the saury fish to the pot. Discarding the liquid helps reduce any fishy odor.

You can add the saury whole, but for easier eating, especially for children or the elderly, it’s best to cut them into 2-3 pieces using scissors or a knife. Eating them with the bones provides a good source of calcium.

Pour in enough water or anchovy-kelp broth to just cover the kimchi. Bring to a rolling boil over high heat with the lid on for 10 minutes. This allows the refreshing flavor of the kimchi and the savory taste of the saury to meld together.

While the stew is boiling, slice the green onion diagonally and thinly slice the Cheongyang peppers. If you prefer a spicier kick, adjust the amount of Cheongyang peppers or add some red chili peppers as well.

Add the prepared green onions and Cheongyang peppers to the kimchi stew that has been boiling for 10 minutes. Next, add 1 Tbsp of minced garlic, 1 tsp of gochugaru, 1 tsp of sugar, and a pinch of black pepper. Stir well to combine. Let it simmer for another 3-5 minutes until the ingredients are tender and the seasonings are well incorporated. Adjust the sugar according to the kimchi’s sourness and your preference. If it tastes bland, add a little fish sauce or soy sauce for a deeper flavor.
