Stew Ingredients

  • 1 large bowl of well-fermented, sour kimchi
  • 1 can of Sauteed Mackerel (use the entire can, including the liquid)
  • 1/2 onion
  • 1/2 green onion

Seasoning & Broth

  • 1/2 Tbsp red pepper powder (gochugaru)
  • 1/2 Tbsp minced garlic
  • Pinch of black pepper
  • 3 cups water (approx. 600ml)

Cooking Instructions

Cut the well-fermented, sour kimchi into bite-sized pieces and place it in a pot. To enhance the flavor, add about 2 ladles of kimchi juice along with the kimchi. This will make the broth much richer.

Prepare the canned sauteed mackerel. Open the can and add the mackerel fillets along with all the liquid from the can into the pot. The liquid from the canned mackerel contains ingredients that help eliminate any fishy smell and add savory depth, so be sure to include it.

Now it’s time to add the seasonings that will give the stew its deep flavor. Pour in 3 cups of water (approx. 600ml), add 1/2 Tbsp of red pepper powder, 1/2 Tbsp of minced garlic, and a pinch of black pepper. Bring it to a rolling boil over high heat. Stir occasionally to ensure the seasonings are well combined as it boils.

Once the stew starts boiling vigorously, add the prepared vegetables. Slice the onion into thin strips or dice it, and slice the green onion diagonally. For extra flavor, you can also add mushrooms or spicy green chilies according to your preference.

Finally, add about 1 teaspoon of natural seasoning to further enhance the overall flavor. (If using commercial MSG or seasoning powder, adjust the amount to your taste.) Cover the pot and let it simmer over medium-low heat for about 5-10 minutes, allowing all the ingredients to meld together. Your delicious and spicy sauteed mackerel kimchi stew is ready!
