Let’s get started on making a delicious soft tofu stew that pairs perfectly with a bowl of warm rice. This recipe is designed to be easy enough for beginners to achieve a fantastic result!

Heat 1 tsp of cooking oil in a pot over medium-low heat. Add 1 Tbsp of gochugaru and stir-fry gently, being careful not to burn it. This process creates chili oil, which enhances the stew’s flavor. Stir-fry for about 30 seconds.

To the stir-fried gochugaru, add 1 tsp of minced garlic, 1 tsp of salt, and a pinch of black pepper. Stir well to combine and release their aromas. If you prefer to use soy sauce or fish sauce for seasoning, you can add them at this stage instead of salt. Taste the broth and adjust with more salt if needed until it reaches your desired seasoning level.

Pour 300ml of water into the pot, stir to dissolve the seasoning mixture, and bring it to a boil over high heat. Once the broth is bubbling vigorously, carefully add the packet of soft tofu. You can either add it whole and break it up gently with a spoon, or scoop it into bite-sized pieces. Stir gently to avoid mashing the tofu as it cooks.
