Main Ingredients- 1/4 head of well-fermented kimchi (cut into bite-sized pieces)
- 1 stalk of green onion (sliced diagonally)
- 1 chili pepper (optional, add for spicier taste)
- 1 can of tuna (use all the oil)
- 1 liter of water
Seasoning and Others- 3 Tbsp tuna extract (or 2 Tbsp soy sauce + 1 Tbsp fish sauce)
- 1 ladleful of kimchi brine (use the liquid from the kimchi jar)
- Pinch of black pepper (a few cracks)
- 2 Tbsp cooking wine (to remove gamey odor and enhance flavor)
- 3 Tbsp tuna extract (or 2 Tbsp soy sauce + 1 Tbsp fish sauce)
- 1 ladleful of kimchi brine (use the liquid from the kimchi jar)
- Pinch of black pepper (a few cracks)
- 2 Tbsp cooking wine (to remove gamey odor and enhance flavor)
Cooking Instructions
Step 1
First, place the bite-sized cut kimchi generously into a pot. If the kimchi’s own seasoning is insufficient, adding a ladleful of kimchi brine will create a deeper flavor.
Step 2
Add the entire contents of the canned tuna, including the oil. This adds a savory richness, similar to sesame oil. Sprinkle with a few cracks of black pepper to eliminate any unwanted odors.
Step 3
Sauté over medium heat until the kimchi softens and the seasonings and tuna oil are well combined. Sautéing for about 3-5 minutes will bring out the umami.
Step 4
Pour 1 liter of water into the sautéed kimchi and bring to a boil over high heat. Once boiling, reduce to medium heat and simmer for about 10 minutes to allow the kimchi flavor to infuse.
Step 5
While the stew is simmering, slice the green onion diagonally and the chili pepper diagonally. If you enjoy a spicy kick, feel free to add 1-2 more chili peppers.
Step 6
Once the kimchi stew has simmered sufficiently, add the prepared green onion and chili pepper. Finally, add 3 tablespoons of tuna extract to season the stew to your taste. You can adjust with soy sauce or fish sauce according to your preference.
Step 7
Simmer for another moment until all the ingredients’ flavors meld together, and your delicious tuna kimchi stew is complete!
Step 8
Serve hot with rice for a hearty and spicy tuna kimchi stew that is truly a rice thief!
