Rich and Savory Pork Kimchi Stew Recipe

Make a delicious kimchi stew bursting with umami, without any MSG! Learn the secrets to a deep and satisfying flavor.
Main Ingredients- Pork (shoulder or neck cut) 200g
- Well-fermented Kimchi 1/2 head
- Tofu 1/2 block
Cooking Instructions
Step 1
Heat 2 Tbsp of olive oil in a pot over low heat. Add 1 Tbsp of minced garlic and sauté slowly until fragrant. Be careful not to burn the garlic!

Step 2
Chop 1/2 green onion into bite-sized pieces and add to the pot. Stir-fry with the garlic over medium heat until the sweetness and aroma of the green onion are released.

Step 3
Add 1 Tbsp of gochugaru and stir-fry briefly with the garlic and green onion for about 10-20 seconds over low heat. This helps to mellow the chili powder’s raw taste and enhance its flavor. Don’t overcook it.

Step 4
Cut 200g of pork into bite-sized pieces and add them to the pot.

Step 5
Stir-fry the pork until it turns white on the outside, ensuring it mixes well with the green onion and seasonings. Allow the pork fat to render, adding richness to the stew.

Step 6
Prepare 1/2 head of well-fermented kimchi. Lightly shake off excess brine and chop it into bite-sized pieces. (If your kimchi is too sour, you can add a pinch of sugar.)

Step 7
Add the chopped kimchi to the pot and stir-fry over medium-low heat for at least 10 minutes. This process mellows the sourness of the kimchi and deepens its flavor. Stir occasionally to prevent sticking.

Step 8
Pour in 4 cups (approx. 800ml) of water and bring to a rolling boil over high heat. Once boiling, skim off any foam or impurities that rise to the surface. Let it simmer to allow the flavors to meld.

Step 9
Add 2 Tbsp of soy sauce for soup to season the stew. (Adjust the amount based on the saltiness of your kimchi, or you can substitute some with fish sauce for an extra layer of umami.)

Step 10
Cut 1/2 block of tofu into large pieces and add them to the stew. Garnish with 1/2 red chili pepper, sliced diagonally, for a touch of heat and color. Simmer for a few more minutes until everything is heated through. Your delicious Pork Kimchi Stew is ready! Enjoy it with a warm bowl of rice.
