Hello everyone! Today, I’m excited to share a recipe for a beloved Korean comfort food that’s guaranteed to be a ‘rice thief’ – Saury Stew, or Ggongchi Jjigae. Made easily with canned saury, this stew boasts a wonderfully spicy and savory broth that’s simply irresistible. It’s perfect for finishing off a bowl of rice and even better with a refreshing drink. Main Ingredients- 1 can Saury (include the liquid)
- 1/2 Onion (sliced)
- 2 Korean Green Chilies (sliced diagonally)
- 1/2 Green Onion (cut into approx. 2cm pieces)
Seasoning- 2 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1/2 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Minced Garlic
- 2 Tbsp Soy Sauce for Soup (Guk-ganjang)

Cooking Instructions
Step 1
First, line the bottom of your pot with the sliced onion and the 2cm pieces of green onion. This step helps to eliminate any potential fishy odor from the saury and adds a deeper flavor to the broth.
Step 2
Thinly slice the Korean green chilies diagonally. If you enjoy a spicier kick, leave the seeds in. If you prefer milder heat, you can remove the seeds before slicing. (Set the sliced chilies aside for now.)
Step 3
Empty the entire can of saury, including the liquid, into the pot. The liquid is packed with umami and will significantly enhance the stew’s overall taste.
Step 4
Now, add 2.5 cups of water (using a standard Korean paper cup for measurement) to the pot. This amount should mostly cover the ingredients. The stew will reduce slightly as it simmers, so this is a good starting point.
Step 5
Bring the stew to a boil over high heat. Once it starts boiling, add all the seasoning ingredients: 2 Tbsp Guk-ganjang, 1/2 Tbsp sugar, 2 Tbsp Gochugaru, and 1 tsp minced garlic. Stir well to combine and adjust the seasoning. Taste it and if needed, you can add a little more Guk-ganjang or salt.
Step 6
Once you’re happy with the seasoning, add the sliced Korean green chilies you set aside earlier. Continue to simmer for about 2-3 minutes, allowing the flavors to meld together. It’s best to leave the lid off during this stage to keep the broth clear and fresh-tasting.
Step 7
After the simmering time is up, your delicious Saury Stew is ready! It’s an absolute ‘rice thief’ when served over a hot bowl of rice, and it pairs wonderfully with a glass of soju. Enjoy your meal!
