Ingredients
  • Well-fermented kimchi, 2.5 cups (measured with a paper cup)
  • Tuna, 1 can (200g), drained
  • Sugar, 0.5 Tbsp
  • Onion, 1/2
  • Perilla oil, 1 Tbsp
  • Water, 4 cups
  • Red pepper flakes, 2 Tbsp
  • Soy sauce, 2 Tbsp
  • Korean green chili pepper (Cheongyang pepper), 1
  • Green onion, 1/2 stalk

Cooking Instructions

Step 1

Place a deep pot over medium heat and add 1 Tbsp of perilla oil. The nutty aroma of perilla oil will deepen the flavor of the kimchi stew.

Step 2

Add 2.5 cups of finely chopped, well-fermented kimchi to the pot and stir-fry over medium heat until softened. Stir-frying the kimchi until tender mellows its sourness and brings out its savory flavor.

Step 3

Once the kimchi is somewhat stir-fried, add 0.5 Tbsp of sugar. Sugar balances the sourness of the kimchi and harmonizes the overall taste.

Step 4

While stirring to prevent the kimchi from sticking to the pot, add 1/2 chopped onion and stir-fry together until it becomes translucent. The sweetness from the onion will enrich the broth.

Step 5

When the onion is tender, pour in 4 cups of water. Using anchovy-kelp broth instead of water will create an even richer flavor.

Step 6

Once the broth begins to boil, add 2 Tbsp of red pepper flakes and 2 Tbsp of soy sauce to give it a spicy kick and umami. Stir well to distribute the seasonings evenly.

Step 7

Add 1 can (200g) of drained tuna to the pot, including its oil, which will add to the flavor. Ensure you’ve drained most of the oil from the can before adding.

Step 8

Finally, add 1 chopped Korean green chili pepper and 1/2 sliced green onion. The chili pepper adds spiciness, and the green onion provides a refreshing taste. Taste the stew and adjust the seasoning with salt according to your preference.

Step 9

Cover the pot and let it simmer vigorously over medium-low heat for about 5 minutes for all the ingredients to meld together, completing your delicious Tuna Kimchi Stew! Enjoy it with a hot bowl of rice.
