Spicy Braised Potatoes
A delightful recipe for Gamja Jorim (braised potatoes) that is both fluffy and perfectly spiced with a savory and slightly sweet kick. These potatoes are so delicious, they’ll become a new favorite side dish that pairs wonderfully with any meal. Easy to make with simple ingredients, this dish offers a wonderful texture and flavor combination that even beginners can master.
Main Ingredients
- 4 medium potatoes
- 1/2 medium onion
Seasoning Ingredients
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp soy sauce
- 3 Tbsp oligo-syrup (or corn syrup)
- 1 Tbsp sugar
- 1 Tbsp mirin (rice wine)
- 0.5 Tbsp minced garlic
- 2 Tbsp chopped green onion
- A drizzle of sesame oil (for finishing)
- 1 Tbsp gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, thoroughly wash the 4 medium potatoes and peel them. Then, cut them into bite-sized cubes, slightly larger than typical. Cutting them a bit larger helps prevent them from breaking apart too much during the braising process.
Step 2
Place the cubed potatoes in a pot and add just enough water to barely cover them. Bring to a boil over high heat, then reduce to medium heat and cook until the potatoes are about halfway tender. Boiling them partially in water before adding the seasoning prevents them from burning or becoming mushy on the outside while remaining undercooked inside. Unlike stir-fried potato dishes, for braised potatoes, it’s essential for the potatoes to be fully cooked and tender for the best texture and flavor.
Step 3
While the potatoes are cooking, prepare the other vegetables. Dice the 1/2 onion into pieces similar in size to the potato cubes. Finely chop the green onion for garnish.
Step 4
In a small bowl, combine all the seasoning ingredients: 1 Tbsp gochujang, 1 Tbsp gochugaru, 3 Tbsp soy sauce, 3 Tbsp oligo-syrup, 1 Tbsp sugar, 1 Tbsp mirin, and 0.5 Tbsp minced garlic. Mix well to create the seasoning sauce. Once the potatoes are halfway tender, drain most of the water from the pot, then add the prepared seasoning sauce and diced onion. Reduce the heat to medium-low and let the potatoes simmer gently until they are fully cooked and the sauce has thickened slightly, coating the potatoes beautifully. Stir occasionally to prevent sticking. Finally, once the potatoes are tender and the sauce is nicely reduced, stir in the chopped green onion and finish with a drizzle of sesame oil.
