Essential Ingredients

  • 1.5 cups cooked rice (preferably day-old/chilled)
  • 1/4 head well-fermented kimchi (chopped into bite-sized pieces)
  • 1 can tuna (drained)
  • 1/4 onion (finely minced)
  • 1/8 carrot (finely minced)
  • 2 green onions (chopped)
  • 4-5 cups anchovy-kelp broth (or rice water)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

Lightly heat a pot over medium heat, then add about half a tablespoon of the oil from the canned tuna. (You can skip this if the oil content is too high).

Step 1

Step 2

Add the finely minced onion and carrot to the pot and sauté until the onion becomes translucent. This process draws out the natural sweetness from the vegetables, enhancing the porridge’s flavor.

Step 2

Step 3

Once the onion and carrot are softened, add the chopped kimchi, chopped green onions (save some for garnish), and 1 tablespoon of sesame oil. Stir-fry together for 2-3 minutes until the kimchi becomes tender. This helps to mellow the kimchi’s sourness and bring out its umami.

Step 3

Step 4

After sautéing, pour in 4-5 cups of anchovy-kelp broth and bring to a rolling boil over high heat. Skimming off any impurities that rise to the surface will result in a cleaner taste.

Step 4

Step 5

Once the broth is boiling, add the chilled rice and reduce the heat to medium. Break up any clumps of rice with a spoon or spatula as it simmers.

Step 5

Step 6

As the rice breaks down and the porridge begins to thicken, add the completely drained tuna. Gently break apart the tuna chunks and mix them thoroughly with the rice.

Step 6

Step 7

Reduce the heat to low and continue to simmer for another 5-10 minutes, or until the rice grains are fully softened and the porridge has reached your desired consistency. Stir frequently to prevent sticking to the bottom of the pot. Once cooked, ladle the porridge into a bowl and garnish with the reserved chopped green onions. Enjoy your delicious Kimchi Tuna Porridge!
