Main Ingredients- 300g Pork (neck or belly recommended)
- 7 leaves of well-fermented aged kimchi
- 600ml Anchovy-Kelp Broth or Rice Water
- 2 ladles of Kimchi Juice
- 1 Tbsp Cooking Wine (Mirin)
- Pinch of Salt
- Pinch of Black Pepper

Step 1
First, prepare all your ingredients. Slice the scallions and optional Cheongyang/red peppers diagonally, and have the minced garlic ready. Cut the kimchi into manageable pieces.

The key to a delicious kimchi stew is the broth! Prepare a rich broth by boiling anchovies and kelp for about 10 minutes, or use rice water for a good base. (Tip: Using a store-bought broth pack makes it quick and easy.)

Cut the pork into bite-sized pieces and place them in a bowl. Add 1 Tbsp cooking wine, a pinch of salt, and a pinch of pepper. Gently mix to marinate the pork. This helps remove any gamey odors and ensures a tender texture.
