With more time spent together at home during the break, my husband mentioned, “Honey, I’d love some kimchi stew with rice!” So, I quickly headed to the mart for pork and bean sprouts and whipped up this comforting dish. The rich, spicy broth, tender pork, and crisp kimchi create a perfect harmony that will surely satisfy your husband’s appetite.
Main Ingredients- Well-fermented Kimchi (aged napa cabbage kimchi) 1/8 head
- Pork (neck or belly) 150g
- Green Onion 1/2 stalk
- Bean Sprouts 100g
- Eggs 2
- Cooked Rice 1 bowl
Cooking Instructions
Step 1
First, prepare a deep and refreshing broth using anchovies and kelp. (Boil about a handful of anchovies and a 10cm square piece of kelp in 5 cups of water for about 15 minutes, then strain out the solids.) Cut the kimchi into bite-sized pieces (about 2-3 cm) and slice the green onion diagonally.
Step 2
Lightly grease a heated pot with cooking oil and stir-fry the pork. Once the pork is partially cooked, add minced garlic and cooking wine, and continue to stir-fry to eliminate any gamey odors. Frying the pork until it’s nicely browned is a secret to delicious flavor.
Step 3
Add the prepared anchovy-kelp broth, sliced kimchi, and thoroughly washed bean sprouts to the stir-fried pork. Bring to a boil over high heat, then reduce to medium heat, cover, and simmer for about 10-15 minutes to allow the ingredients to cook through and the flavors to meld.
Step 4
Taste the kimchi broth and adjust the seasoning with soy sauce for soup or salt if needed. Since the saltiness varies with kimchi, it’s crucial to taste and adjust accordingly. Finally, add the sliced green onions and simmer for a short while longer to complete the delicious and spicy kimchi stew broth.
Step 5
In a warm earthenware pot (ttukbaegi), place the cooked rice first. Ladle the generously simmered kimchi stew, along with plenty of broth, over the rice.
