Spicy and Refreshing Bean Sprout Soup

I made soup with a bag of bean sprouts I bought. This recipe is for a spicy and refreshing bean sprout soup that will make you feel refreshed from the inside out, perfect for breakfast or as a hangover cure!

Main Ingredients

  • 500g bean sprouts
  • A little bit of green onion

Seasoning & Broth Ingredients

  • 1 Tbsp chili powder
  • 1 Tbsp soup soy sauce
  • 2 Tbsp fish sauce (or anchovy extract)
  • 1 tsp minced garlic
  • 1 tsp anchovy broth powder (dashida)
  • 2 tsp salt (or to taste, can be substituted with more soy sauce)
  • Plenty of water (enough to cover the bean sprouts)

Cooking Instructions

First, wash one bag (500g) of bean sprouts thoroughly under running water. Place the washed bean sprouts in a pot and add plenty of water, enough to generously cover them.

Add 1 tablespoon of soup soy sauce and 2 tablespoons of fish sauce to create the base flavor of the broth. If you don’t have fish sauce, you can substitute it with regular soy sauce or anchovy sauce.

Add 1 tablespoon of chili powder for a spicy kick. If you enjoy more heat, feel free to add a little extra.

Stir in 1 teaspoon of anchovy broth powder (Dashida) to enrich the soup’s flavor. Alternatively, you can use anchovy broth instead of water.

Finely chop the green onion. This will be added at the end for a touch of freshness and color to the clear soup.

Now, bring the pot to a boil over high heat. Once the soup is boiling, add 1/2 teaspoon of Dashida and 2 teaspoons of salt to season. Taste and adjust the saltiness if needed. (You can use the full 1 tsp of Dashida for seasoning here as well)

As the soup boils, skim off any foam that rises to the surface. This helps to create a cleaner and clearer broth.

Add 1 teaspoon of minced garlic to enhance the refreshing taste of the soup and mix well. You can adjust the amount of garlic according to your preference.
