Super Simple Way to Make Refreshing Bean Sprout Soup
Make two dishes at once! This recipe utilizes bean sprouts boiled for a side dish. A small amount of bean sprouts are left in the broth, enhanced with spicy chili peppers for a refreshing and flavorful soup. Enjoy this quick and delicious soup, perfect for hangovers!
Main Ingredients
- 1 bag bean sprouts (approx. 200g)
- 1 Korean green chili pepper (Cheongyang)
- A little bit of scallions or green onions
Seasoning
- 1/2 Tbsp salt (adjust to taste)
- 1/2 Tbsp salt (adjust to taste)
Cooking Instructions
Step 1
Pour about 5-6 cups (approx. 1 liter) of water into a pot and bring it to a boil over high heat. While preparing the washed bean sprouts, let the water come to a boil.
Step 2
Once the water is rapidly boiling, add all the thoroughly washed bean sprouts.
Step 3
After adding the bean sprouts, be sure to cover the pot and boil them over medium heat for about 5 minutes. Avoid opening the lid while cooking, as this can cause a fishy smell!
Step 4
While the bean sprouts are boiling, wash and finely chop the scallions or green onions. Also, remove the seeds from the Korean green chili pepper and mince it finely. If you like it spicier, feel free to increase the amount of chili pepper.
Step 5
Finely mince the prepared scallions (or green onions) and green chili pepper. These will be used as a garnish.
Step 6
Remove the boiled bean sprouts from the pot and set them aside for another dish (e.g., seasoned bean sprouts). Leave a small portion of the bean sprouts in the broth.
Step 7
Add the reserved bean sprouts back into the broth. Season the soup with salt. Start with 1/2 tablespoon and add more to taste according to your preference. For an extra boost of umami, you can add a tiny bit of anchovy broth or soup soy sauce.
Step 8
Finally, add the minced Korean green chili pepper and boil for another moment to let the spicy flavor infuse. You can also use regular green peppers or red chili peppers for a nice color.
Step 9
Ladle the finished bean sprout soup into bowls. Garnish with the prepared chopped scallions (or green onions). Enjoy your warm and refreshing bean sprout soup!
