First, let’s prepare the scallions, which are key to the soup’s refreshing flavor. Cut the scallions into pieces about 5-7cm long, and then slice them lengthwise into 2-4 strips depending on thickness. Cut the tofu into bite-sized cubes, about 1.5cm thick.

Use beef cut for soup. If using frozen beef, make sure to thaw it completely before cooking. If the beef has been stored frozen, pat it thoroughly dry with paper towels to remove any excess blood. This step is crucial for a clean and savory broth flavor.

To create a deep and refreshing broth, place the dried kelp and anchovies in a pot with 5 cups (1L) of water and bring it to a boil. Once the water boils, remove the kelp.
