- 1/3 cup Cheongju (Korean rice wine, for removing odor)
- 2 bay leaves
- 3 medium potatoes
- 1/3 medium carrot
- 1 medium onion
- 2 shiitake mushrooms
- 10 raw shrimp (peeled and deveined)
Spicy Seasoning Mix
- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp minced garlic
- 1/2 cup chopped green onion (white and green parts)
- 1 tsp minced ginger
- 4 Tbsp Jin Ganjang (Korean soy sauce)
- 1 Tbsp honey (for sweetness)
- 1 Tbsp Cheongju (for aroma)
- 1 tsp black pepper
- 1 tsp sesame oil
- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp minced garlic
- 1/2 cup chopped green onion (white and green parts)
- 1 tsp minced ginger
- 4 Tbsp Jin Ganjang (Korean soy sauce)

Cooking Instructions
Step 1
First, let’s prepare the broth to remove any gamey odor from the chicken. In a pot, add enough water to cover the ingredients. Toss in the white parts of the leek, whole garlic cloves, whole peppercorns, bay leaves, and 1/3 cup of Cheongju. Bring this mixture to a rolling boil.

Mix well to form a paste. It’s important that the seasoning paste tastes quite strong and salty at this stage, as the flavor will mellow out once the water, chicken, and vegetables are added. Add this seasoning paste to the pot. Pour in enough water so that the ingredients are about halfway submerged.
