Stew Ingredients

  • 1 block Soft Tofu (silken tofu)
  • 1/3 Zucchini (sliced thinly)
  • 3 clusters Oyster Mushrooms (stem removed and separated)
  • 1/2 Onion (sliced thinly)
  • 7 Clams (purged of sand)

Seasoning Paste

  • 3 Tbsp Soy Sauce for soup (Gukganjang)
  • 3 Tbsp Red Pepper Powder (Gochugaru)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Fish Sauce (Anchovy or Shrimp)
  • 1 Tbsp Curry Powder
  • 0.5 Tbsp Salted Shrimp (Saeujeot)
  • 2 Tbsp Minced Pork (optional, adds depth of flavor)

Cooking Instructions

Step 1

First, prepare all the ingredients for the stew. Wash the zucchini and slice it thinly. Remove the tough stem from the oyster mushrooms and separate them into strands. Thinly slice the onion. Purge the clams by soaking them in salt water and covering with a dark cloth for at least 30 minutes to remove any grit.

In a pot, add the minced pork and stir-fry over medium heat until it turns white. Then, add the thinly sliced onion and sauté until it becomes translucent, which helps develop the flavor of the broth.

Now, let’s make the flavorful seasoning paste. To the pot with the pork and onions, add 3 Tbsp soy sauce for soup, 3 Tbsp red pepper powder, 1 Tbsp minced garlic, 1 Tbsp fish sauce, 1 Tbsp curry powder, and 0.5 Tbsp salted shrimp. Stir well to combine and sauté for about 1 minute over low heat to prevent burning.

Pour in 2-3 cups of broth (or rice water) and add the purged clams. Bring to a boil over high heat. Once boiling, add the sliced zucchini and oyster mushrooms. Cook until the vegetables are tender and the clams have opened. Be careful not to overcook the clams, as they can become tough.

In a separate bowl, crack 1-2 eggs and whisk them lightly to break the yolks and remove any stringy bits. This will be your egg wash.

Carefully remove the wrapper from the soft tofu. Cut the block in half and then into large, chunky pieces. Add these large pieces directly to the stew without breaking them up too much, to maintain their soft texture.

While the stew is simmering, gently drizzle the whisked egg over the surface of the stew. Let the egg set slightly before carefully adding the chunks of soft tofu.
