Spicy and Refreshing Cod Stew (Dongtae-tang) Golden Recipe

Even with frozen cod, you can easily make a deeply flavorful and spicy cod stew at home. The spicy broth and tender cod flesh are truly a mealtime delight.
Cod Stew Ingredients- Prepared Cod 730g
- Radish 300g (cut into thick slices)
- Green Onion 44g (cut diagonally and lengthwise)
- Cheongyang Peppers 2 (sliced diagonally)
- Red Chili Peppers 1 (sliced diagonally)
- Tofu 1 block (approx. 300g, cut into thick pieces)
- Rice Water 1.6L
- Crown Daisy (Ssukgat) 1 bunch (washed and ready)
Spicy Cod Stew Seasoning- Minced Garlic 2 Tbsp
- Minced Ginger 1/2 Tbsp
- Salted Shrimp 1.5 Tbsp (with liquid and solids)
- Korean Soup Soy Sauce 8 Tbsp
- Gochugaru (Korean Chili Flakes) 3 Tbsp (adjust to spice preference)
- Gochujang (Korean Chili Paste) 2 Tbsp
- Doenjang (Soybean Paste) 1 Tbsp (adds depth of flavor)
- Minced Garlic 2 Tbsp
- Minced Ginger 1/2 Tbsp
- Salted Shrimp 1.5 Tbsp (with liquid and solids)
- Korean Soup Soy Sauce 8 Tbsp
- Gochugaru (Korean Chili Flakes) 3 Tbsp (adjust to spice preference)
- Gochujang (Korean Chili Paste) 2 Tbsp
- Doenjang (Soybean Paste) 1 Tbsp (adds depth of flavor)
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Slice the green onions in half lengthwise, then cut them diagonally into large pieces. Cut the radish into 0.5cm thick slices, and cut the tofu into thick pieces, about 1.5-2cm thick. Slice the Cheongyang and red chili peppers diagonally for a fresh look. Wash the crown daisy and set it aside to garnish at the end.
Step 2
To ensure a clean taste, remove the cod’s roe and innards. (Leaving them in can make the broth slightly bitter.) The black membrane inside the cod’s belly can be easily pulled off by hand. Also, use a chopstick or fork to gently scrape off any congealed blood around the bones, then rinse thoroughly. This preparation will make your cod stew taste much cleaner.
Step 3
Now, let’s make the seasoning, the heart of a delicious cod stew! In a bowl, combine 2 Tbsp minced garlic, 1/2 Tbsp minced ginger, 1.5 Tbsp salted shrimp (use both the liquid and solids), 8 Tbsp Korean soup soy sauce, 3 Tbsp gochugaru, 2 Tbsp gochujang, and 1 Tbsp doenjang for an extra layer of savory flavor. Mix everything together well. This seasoning mix will be responsible for the stew’s spicy and deep taste.
Step 4
Place the sliced radish at the bottom of your pot or earthenware pot. Arrange the prepared cod pieces attractively on top. Now, pour in 1.6L of the prepared rice water until the cod is sufficiently submerged. Turn the heat to high and bring it to a boil. Once boiling, continue to cook the cod.
Step 5
Once the rice water comes to a boil, gradually add the prepared seasoning mixture in 2-3 portions, tasting and adjusting the seasoning as you go. It’s best not to add all the seasoning at once. Next, add the sliced green onions, Cheongyang peppers, red chili peppers, and tofu, and let it simmer for a while longer. Finally, garnish generously with crown daisy according to your preference. Your spicy and refreshing cod stew is ready! Enjoy it while it’s hot.
