Here’s a simple recipe to make a flavorful and spicy Korean crab stew (Kkotgetang) right at home. The combination of fresh crab and a clear, invigorating broth makes it perfect for a hangover cure or a hearty meal.

Base Broth and Seasoning

  • Doenjang (Korean soybean paste) 2 Tbsp
  • Gochujang (Korean chili paste) 1 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • MSG or Dasida (optional) 1 tsp
  • Minced garlic 1 Tbsp
  • Water 3 cups (approx. 600ml)

In a pot, pour 3 cups (approx. 600ml) of water and dissolve 2 Tbsp of doenjang. Stir well to ensure there are no lumps.

Add 1 Tbsp of gochugaru to give the broth a nice color and a spicier kick.

Rinse the cleaned crabs thoroughly. Remove the shell, the ‘jaw’ or mouth parts, and any sharp bits from the legs. Cut the crabs into manageable, bite-sized pieces. (How to clean crabs: Open the shell, remove the innards and the beak, then rinse under clean water.)

Add all the prepared crabs to the broth base with doenjang and gochugaru. Bring to a boil over medium heat and simmer for about 10-15 minutes, allowing the crab’s natural sweetness to infuse the broth.

While the crabs are cooking, slice the onion, and diagonally slice the green onion and chili pepper. Pre-slicing the vegetables will help speed up the cooking process.

Once the crabs are partially cooked, add the prepared onion, green onion, and chili pepper to the pot. As the vegetables cook, they will add a refreshing depth to the broth.
