  • 150g Bean Sprouts
  • 1 bowl of well-fermented Napa Cabbage Kimchi
  • 1 ladle of Kimchi Brine
  • 1 Anchovy and Seafood Broth Pack
  • 1500ml Water (approx. 7.5 cups)

Seasonings and Others
  • A little fish sauce (to taste)
  • A little soy sauce or salt (to taste)
  • 1/2 stalk of Green Onion

Cooking Instructions

Step 1

First, pour 1500ml of water into a pot and add the anchovy and seafood broth pack. Simmer over medium heat for about 10 minutes to extract a rich broth, then remove and discard the broth pack. This step will make the soup’s flavor much deeper and more robust.

Step 2

While the broth is simmering, wash the bean sprouts thoroughly and drain them. Using fresh bean sprouts is key to avoiding any fishy smell and achieving a pleasant crunchy texture.

Chop the kimchi into bite-sized pieces and prepare it along with the kimchi brine. Using well-fermented, sour kimchi will result in a tangier and more refreshing soup base.

Add the chopped kimchi to the well-extracted broth and bring it to a boil. It’s best to cook with the lid off from the beginning, allowing the kimchi’s tartness to infuse into the soup without evaporating.

Step 5

Once the kimchi is somewhat cooked and the soup is bubbling vigorously, add the prepared bean sprouts. Avoid overcooking the bean sprouts after adding them to maintain their crispiness.

When the bean sprouts are cooked, season the soup to your liking with fish sauce, soy sauce, or salt. A little fish sauce adds umami, and salt can be used to perfect the taste for a clean finish.
