  • 1/4 head well-fermented kimchi, chopped (or about 2 cups)
  • 2 servings store-bought fresh kalguksu noodles
  • 3-4 stalks scallions, chopped
  • 1 Tbsp minced garlic

First, prepare the broth that will give your Kimchi Kalguksu its deep and refreshing flavor. Oyster broth is ideal, but if unavailable, anchovy-kelp broth, rice water, or plain water will also result in a delicious soup. Prepare about 600ml of broth for a standard 2-serving portion.

Chop the kimchi into bite-sized pieces, about 1.5 to 2 cm in size. Cutting it too small might reduce the chewy texture, so aim for a moderate size for a better eating experience.

Wash the scallions thoroughly and cut them into lengths of about 3 to 4 cm. These will be added as a garnish, adding both color and a fragrant aroma to your kalguksu.

Now, pour the prepared broth (or water) into a pot and bring it to a boil over high heat. Once the water is boiling, add the chopped kimchi and let it simmer together until the kimchi softens. If the kimchi is too sour, you can add a little more water, or if it’s not fermented enough, a tiny pinch of sugar can balance the acidity.

When the broth is boiling well and the kimchi has softened, add the store-bought fresh kalguksu noodles. Before adding the noodles, if you find the soup needs more seasoning, this is the time to add some kimchi juice (or soy sauce, salt) for extra umami. Also, add the minced garlic now.

Gently loosen the noodles with chopsticks as they cook to prevent them from sticking together. Once the noodles float to the surface, they are almost cooked. Continue to boil for another 3-5 minutes, checking the noodle’s tenderness. Be careful not to overcook them until mushy.
