Delicious Kimchi Soft Tofu Stew with a Cool and Spicy Kick
Make a comforting and delicious Kimchi Soft Tofu Stew using simple ingredients like kimchi, bean sprouts, and soft tofu. It’s perfect for a soothing meal or even as a hangover remedy.
Main Ingredients- 1/2 cup well-fermented kimchi, chopped
- 100g bean sprouts
- 1 packet (approx. 300-400g) soft tofu
- 5 Tbsp anchovy-kelp broth (or rice water)
- 1 Tbsp salted shrimp
- A little bit of green onion, finely chopped
- 4 cups water
Cooking Instructions
Step 1
First, prepare the ingredients. Chop the kimchi into bite-sized pieces (about 2-3 cm). Rinse the bean sprouts thoroughly and drain. Finely chop the green onion. Have the soft tofu ready to be used just before cooking.
Step 2
Pour 4 cups of water into a pot and bring it to a boil. Once boiling, add the chopped kimchi. If your kimchi is well-fermented, sour, and already seasoned, it will provide plenty of flavor without needing extra seasonings. Simmer the kimchi for about 10 minutes, allowing its flavor to infuse into the water, as if sautéing it.
Step 3
After the kimchi has simmered sufficiently, add the rinsed bean sprouts. Cover the pot and let it boil for another 3 minutes. Avoid overcooking the bean sprouts, as they can lose their crispness. Stick to the recommended cooking time for the best texture.
Step 4
Now it’s time to season the stew. Add the 5 tablespoons of anchovy-kelp broth and 1 tablespoon of salted shrimp to adjust the taste. Salted shrimp adds a savory depth and a clean flavor to the broth. Adjust the amount of salted shrimp based on the saltiness of your kimchi, or add a little more soy sauce or fish sauce to suit your preference.
Step 5
Gently break the soft tofu into large chunks using a spoon and add it to the pot. Avoid stirring too much to maintain the soft, silky texture of the tofu.
Step 6
