Main Ingredients
- 5-7 large dumplings (mandu)
- Beef bone broth (pre-made or homemade)
- 1/2 onion
- 1/2 green onion (scallion)
- 1-2 Korean chili peppers (optional)
- Mushrooms (shiitake, oyster, etc., optional)
Cooking Instructions
Step 1
First, prepare the vegetables for your Mandu Jeongol. Slice the green onion into roughly 1cm pieces and thinly slice the onion. If you enjoy a spicier kick, finely chop 1-2 Korean chili peppers. (Although not pictured, if you have mushrooms like shiitake or oyster mushrooms that you enjoy, adding them to the hot pot will provide a richer and deeper flavor.)
Step 2
Next, let’s make the seasoning paste, which is simple but crucial for the flavor. In a bowl, combine 4 Tbsp of gochugaru, 3 Tbsp of soy sauce, and 1 Tbsp of minced garlic. Mix them well to create the seasoning paste. You can make a wonderfully delicious Mandu Jeongol with these few ingredients!
Step 3
Now, arrange the large dumplings attractively in the pot. Add the thinly sliced onions alongside them. Pour in enough beef bone broth to generously cover the ingredients. Using store-bought beef bone broth is convenient, but you can also use homemade broth or, for a cleaner taste, anchovy broth. If you don’t have any broth available, plain water will also work, although the umami flavor will be slightly less pronounced.
Step 4
Cover the pot with a lid and bring the broth to a rolling boil over high heat. While it’s boiling, the ingredients will begin to cook evenly.
Step 5
Once the broth is at a rolling boil, add the prepared seasoning paste to the pot and stir it in thoroughly. After adding the seasoning, continue to boil vigorously over high heat until all ingredients are fully cooked.
Step 6
When all the ingredients, including the dumplings and vegetables, are cooked through, add the sliced green onions and Korean chili peppers. Let it simmer for another minute. Your delicious Mandu Jeongol is ready! Serve it piping hot and enjoy.
