Spicy and Refreshing Monkfish Stew: A Hearty Meal for a Busy Husband
A Wholesome Meal to Cherish Your Husband Who’s Always on the Go
For your husband who wakes up at 6 AM and rushes out the door before 7, prepare this nourishing and invigorating monkfish stew. It’s a dish designed to replenish his energy after a long day. Fresh monkfish, tender radish, and a hint of spiciness from chili peppers create a deeply flavorful and comforting broth. This hearty stew is perfect for ensuring he has a satisfying and healthy meal, even amidst his demanding schedule.
Main Ingredients- 1/2 fresh monkfish, cleaned and prepared
- 1/5 radish (for a refreshing taste)
- 1/2 leek or green onion stalk
- 2 Korean green chili peppers (for a spicy kick)
- A handful of crown daisy (adjust to preference)
- 2 Tbsp anchovy sauce (for umami)
- 6 cups anchovy broth (approx. 1.2L, for a refreshing base)
- 1/2 block firm tofu
- A pinch of minced garlic (for aroma)
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Slice the radish into thin, half-moon shapes about 0.5cm thick. Cut the leek or green onion stalk diagonally. Finely chop the Korean green chili peppers for a touch of heat. Wash the crown daisy and separate the leaves. Pour 6 cups of anchovy broth, made by simmering anchovies and dried kelp, into a pot. Add the sliced radish first and bring to a boil. Simmer until the radish becomes translucent; this will make the broth extra refreshing.
Step 2
Once the radish is tender, add the firm tofu and the prepared monkfish to the pot. Cook until the monkfish turns opaque and is cooked through. When the stew comes to a boil, add the sliced leek or green onion and chopped chili peppers, and let it simmer for another 5 minutes. Adjust the seasoning with 2 tablespoons of anchovy sauce to taste. Finally, stir in a pinch of minced garlic for extra flavor and add the crown daisy leaves just before turning off the heat. Cooking the crown daisy for too long can make it wilt, so adding it at the end keeps it fresh.
Step 3
Ladle the finished monkfish stew into serving bowls. Garnish with the reserved crown daisy leaves for a visually appealing presentation. Enjoy the hot, refreshing broth and the tender monkfish. This stew makes for a hearty and satisfying meal, especially when served with a bowl of rice.
