Spicy and Refreshing Mussel Soup (Honghap Tang)

Essential Ingredients- 1kg fresh mussels
- 1 Tbsp minced garlic
- 1 large green onion (scallion)
- Water (enough to cover the mussels)
- 2 dried chili peppers or peperoncini
- Pinch of salt
Cooking Instructions
Step 1
First, thoroughly remove the beards (byssus threads) from the mussels. Then, rinse them under running water multiple times, rubbing the mussels against each other to scrub away any dirt or grit stuck between the shells. Drain and set aside.
Step 2
Place the cleaned mussels in a pot. Add enough water to completely submerge the mussels. Now, add the minced garlic and the dried chili peppers (or peperoncini). If you prefer a spicier soup, feel free to adjust the amount of chili.
Step 3
Bring the pot to a boil over high heat. As it starts to boil, foam will appear on the surface of the clear broth. Gently skim this foam off with a spoon for a cleaner taste. Next, add the green onion, sliced diagonally, and continue to cook until the mussel shells open wide. Your delicious mussel soup is now complete! Be careful not to overcook, as this can make the mussel meat tough. Finally, taste the broth and adjust with a pinch of salt if needed.
