Stew Ingredients

  • 500g Fresh Pollack Roe (Al)
  • 500g Pollack Roe Milt (Goni)
  • 1 Crab (cleaned and cut)
  • 2 Shrimp (peeled)
  • 1/4 Cod (cut into pieces)
  • 1/4 Daikon Radish (thinly sliced)
  • 1/4 Onion (sliced)
  • 2 Scallions (cut diagonally)
  • 1 bunch King Oyster Mushrooms (bottom trimmed)
  • 1.2L Water
  • 3 Coin-shaped Anchovy Broth Cubes

Seasoning

  • 5 Tbsp Soy Sauce for Soup (Gukganjang)
  • 1 Tbsp Gochujang (Red Pepper Paste)
  • 2 Tbsp Red Pepper Flakes (Gochugaru)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Fish Sauce (or Anchovy Extract)
  • 1/3 Tbsp Sugar
  • Pinch of Black Pepper
  • Salt (to taste)

Cooking Instructions

Step 1

First, let’s prepare the star ingredients that will make this stew delicious. Gently rinse the pollack roe and milt under running water. Peel the shrimp. Scrub the crab clean and cut it into serving pieces. Clean the cod, removing its innards and fins.

Let’s build the foundation for a deep and refreshing broth. Pour 1.2L of water into a pot and add 3 coin-shaped anchovy broth cubes. These cubes will add a rich and savory depth to your stew.

While the broth is coming to a boil, prepare your vegetables. Slice the daikon radish thinly so it cooks easily in the pot. Slice the onion to add sweetness and a refreshing taste. Cut the scallions diagonally to infuse their aroma, and trim the bottoms of the king oyster mushrooms. (If you’d like more heat, finely chop some chili peppers at this stage too.)

Once the water with the broth cubes starts to boil, add the sliced daikon radish first. Cooking the radish beforehand will make the broth even more refreshing and clean-tasting. Let it simmer for about 5 minutes until the radish becomes translucent and tender.

When the radish is partially cooked, it’s time to add the seasonings to create that savory pollack roe stew flavor. Stir in 5 Tbsp of soy sauce for soup, 1 Tbsp of gochujang, 2 Tbsp of red pepper flakes, 1 Tbsp of minced garlic, 1 Tbsp of fish sauce, and 1/3 Tbsp of sugar. Stir well to dissolve the seasonings as it simmers.

Once the seasoned broth is bubbling, carefully add all the prepared seafood and ingredients to the pot. Gently place the fresh roe, milt, cod pieces, crab, and shrimp into the simmering broth. It’s already looking like a feast!

Now, just let everything simmer together until cooked! Once the seafood, roe, and milt are fully cooked, sprinkle in a pinch of black pepper to enhance the aroma. Continue to simmer over medium heat for about 10 minutes, allowing the flavors to meld beautifully into the broth. Finally, taste and adjust the seasoning. Add more salt or soy sauce for soup if needed, and a bit more red pepper flakes if you prefer it spicier.
