Spicy and Refreshing Pork Clear Soup
A Clear Pork Soup That Rivals Beef! Deliciously Made with Pork.
Make a wonderful clear soup with pork you have at home. Its deep, refreshing flavor is comparable to beef broth, making it a hearty addition to your table, perfect for special occasions or everyday meals.
Main Ingredients- Radish 150g (approx. 1/4 small radish)
- Green Onion 1 stalk (white parts mainly)
- Dried Shiitake Mushrooms 5 pieces
- Onion 1/2 medium size
- Pork Belly or Pork Shoulder 150g
- Water 800ml (approx. 3.5 cups)
Seasoning Ingredients- Gochugaru (Korean chili flakes) 1 Tbsp (approx. 8g)
- Oyster Sauce 1 Tbsp (approx. 12g)
- Minced Garlic 1 Tbsp (approx. 10g)
- Fish Sauce 1 Tbsp (approx. 10ml)
- Soy Sauce for Soup 1 Tbsp (approx. 10ml)
- MSG (Dasida or similar) 1/3 Tbsp (approx. 3g)
- Salt 1/3 Tbsp (approx. 3g)
- Black Pepper 2 pinches (approx. 0.5g)
- Gochugaru (Korean chili flakes) 1 Tbsp (approx. 8g)
- Oyster Sauce 1 Tbsp (approx. 12g)
- Minced Garlic 1 Tbsp (approx. 10g)
- Fish Sauce 1 Tbsp (approx. 10ml)
- Soy Sauce for Soup 1 Tbsp (approx. 10ml)
- MSG (Dasida or similar) 1/3 Tbsp (approx. 3g)
- Salt 1/3 Tbsp (approx. 3g)
- Black Pepper 2 pinches (approx. 0.5g)
Cooking Instructions
Step 1
First, prepare your vegetables. Slice the onion into pieces about 1cm thick. (Half a medium onion is about 100g). The measuring spoon referred to is a standard Korean rice spoon, approximately 8cc. For more recipes and tips, you can find them quickly on the ‘Duyuri-ne’ YouTube channel!
Step 2
Cut the green onion into pieces about 1-2cm long, either diagonally or straight. Cutting them slightly thicker than very small pieces will enhance the flavor in the soup.
Step 3
Slice the radish to about 0.5cm thickness. You can adjust the width and length according to your preference. If sliced too thickly, the radish might not cook through completely. For a clearer soup, slightly thinner slices are recommended.
Step 4
Prepare 150g of pork. Using pork belly will add richness to the broth, but if you prefer a lighter taste, pork shoulder or front leg cuts with a moderate amount of fat are good alternatives. Slice the pork into bite-sized pieces.
Step 5
Heat a pan over medium heat and slowly cook the sliced pork. Once a moderate amount of fat has rendered from the pork, add 1 Tbsp of minced garlic and 1 Tbsp of gochugaru. Stir well and sauté for about 30 seconds, being careful not to burn it. Adjust the heat to medium-low if your stove runs particularly hot.
Step 6
When you can smell the gochugaru cooking, add the sliced radish. Turn the heat up to high and stir-fry everything together for about 1 minute. The radish will release moisture, preventing it from sticking and burning.
Step 7
Now, add the onion and green onion, along with 1 Tbsp of oyster sauce. Sauté for another minute. Stir-frying the ingredients beforehand will create a deeper and richer soup flavor.
Step 8
Pour in 800ml of water. Add the fish sauce, soy sauce for soup, MSG, salt, and the soaked dried shiitake mushrooms as listed in the seasoning ingredients. Once the soup comes to a rolling boil, reduce the heat to medium-low and continue to simmer for about 5 minutes, or until the radish is completely tender. If possible, use the softer caps of the dried shiitake mushrooms.
Step 9
Check if the radish is fully cooked and tender. Taste the soup and add more salt if needed to adjust the seasoning. Finally, add 2 pinches of black pepper and stir gently. Your delicious pork clear soup is ready! Adding pepper at the end preserves its aroma.
Step 10
Ladle the clear pork soup into a bowl. Garnish with sliced green onions as desired. This soup is incredibly satisfying and delicious when served with a bowl of hot rice for a hearty meal!
