Spicy and Refreshing Saury Kimchi Stew Recipe

A fantastic harmony of spicy kimchi and savory saury! Make this saury kimchi stew, a true rice thief, easily and deliciously at home. We’re sharing a recipe that uses canned saury for extra convenience, while preserving its deep flavor. The spicy yet refreshing broth is exceptional, making you want to finish the whole bowl.
Main Ingredients- 1 can Canned Saury (drained)
- 300g Well-fermented Kimchi (about 3 handfuls)
- 3 cups Anchovy-Kelp Broth or Water
- 1/3 block Firm Tofu (approx. 100g)
- 1/3 medium Onion
- 1/3 stalk Green Onion
- 1 Chili Pepper (optional, e.g., Korean green chili or red chili)
Seasoning Ingredients- 3 Tbsp Kimchi Brine
- 2 Tbsp Mirin (or cooking wine)
- 0.5 Tbsp Minced Garlic (approx. 7g)
- 0.5 Tbsp Gochugaru (Korean chili flakes, fine)
- 0.5 Tbsp Soup Soy Sauce (Gukganjang)
- A pinch of Black Pepper
- 3 Tbsp Kimchi Brine
- 2 Tbsp Mirin (or cooking wine)
- 0.5 Tbsp Minced Garlic (approx. 7g)
- 0.5 Tbsp Gochugaru (Korean chili flakes, fine)
- 0.5 Tbsp Soup Soy Sauce (Gukganjang)
- A pinch of Black Pepper
Cooking Instructions
Step 1
Drain the oil from the canned saury using a sieve. Chop the kimchi into bite-sized pieces (about 2-3 cm). Place the chopped kimchi at the bottom of a pot.
Step 2
Arrange the drained saury over the kimchi. Pour in 3 cups (720ml) of anchovy-kelp broth or water. Using broth will add a richer flavor to the stew.
Step 3
Bring the pot to a boil over high heat. Once the broth starts bubbling, add all the seasoning ingredients (kimchi brine, mirin, minced garlic, gochugaru, soup soy sauce, black pepper) and stir well. Let it simmer for a bit after adding the seasonings.
Step 4
When the kimchi and saury have softened and the flavors have melded, add the tofu. Slice the tofu into about 1.5 cm thick pieces and arrange them nicely over the kimchi and saury. Be gentle when adding the tofu to prevent it from breaking.
Step 5
Finally, add the vegetables to enhance the stew’s flavor. Slice the green onion diagonally and the chili pepper (Korean green chili or red chili) thinly on the diagonal or chop it. Scatter the sliced green onion and chili pepper over the stew. Simmer for a little longer until everything is well combined, and your delicious saury kimchi stew is ready! Turn off the heat, let it rest for a moment, and enjoy!
