Stew Ingredients- 1 pack soft tofu (approx. 300g)
- 300ml water
- 1 Tbsp sesame oil
- 1 Tbsp soy sauce for seasoning (Guk-ganjang or Dashida)
- 1 Tbsp minced garlic
- 1 stalk green onion, sliced thinly
- 2 Tbsp red pepper flakes (Gochugaru)
- 2 Korean chili peppers, sliced diagonally
- 15 small clams (must be purged of sand)
- 2 shrimp, peeled and deveined
- 1 egg
Cooking Instructions
Step 1
Before you start cooking, prepare all your ingredients thoroughly. Purge the clams by soaking them in saltwater. Peel and devein the shrimp, and thinly slice the green onion and Korean chili peppers.
Step 2
Heat 1 Tbsp of sesame oil in a deep pot or earthenware pot over medium-low heat. Add 2 Tbsp of red pepper flakes and stir-fry for about 1 minute, being careful not to burn them, to extract the chili oil. This step is crucial for a delicious flavor. Add 1 Tbsp of minced garlic along with the pepper flakes and stir-fry briefly until fragrant.
Step 3
Once the chili oil is fragrant, pour in 300ml of water. Bring it to a boil, then reduce the heat to medium.
Step 4
Now, add the prepared seafood: the purged clams and the cleaned shrimp. Cover the pot and let it simmer until the seafood is fully cooked. The seafood will release its natural sweetness and umami, adding depth to the broth.
Step 5
When the seafood is cooked, carefully add the soft tofu. Use a spoon to break the block of tofu into large pieces directly into the pot. Be gentle to avoid crumbling the tofu. Once the stew begins to bubble after adding the tofu, reduce the heat to low.

Stir in 1 Tbsp of minced garlic and 1 Tbsp of seasoning soy sauce. Mix well to distribute the flavors. If the stew tastes a bit bland, you can add a little more seasoning soy sauce to adjust to your preference.
Step 7
Add the sliced Korean chili peppers (for spiciness and color) and the sliced green onions. If you prefer a milder heat or want a prettier color, you can also add sliced red chili peppers. Taste the stew and if it’s not salty enough, add a bit more seasoning soy sauce.
Step 8
Your delicious seafood soft tofu stew is ready! For the best experience, transfer the stew to a preheated earthenware pot (ttukbaegi) to keep it hot. Serving it in the bubbling pot enhances the flavors. Finally, crack 1 fresh egg into the stew just before serving for added richness and a creamy texture.
