Easy Baek Jong-won Style Ggotgetang Recipe using Frozen Snow Crabs

Based on Baek Jong-won’s recipe, we’ve added a whole dried pollock (cod) as recommended by my mother-in-law, creating an even deeper and richer flavor. Main Ingredients- 350g Frozen Snow Crab (cleaned, frozen)
- 2 pieces Dried Pollock (Cod)
- 200g Radish
Cooking Instructions
Step 1
01. Start with a Flavorful Broth: In a wide, deep pot, add 1.5L of water, 2 sheets of dried kelp, and 10 dried anchovies for broth. Bring to a boil over high heat. Once boiling, remove the kelp and reduce the heat to medium. Simmer for another 10 minutes to create a rich and refreshing broth.

02. Prepare the Snow Crabs: For safety and cleaner presentation, trim the sharp pointy tips of the snow crab’s legs and shell edges with scissors. Rinse the crabs lightly under running water to remove any debris.

03. Chop the Vegetables: Prepare the vegetables that will add texture and flavor to the stew. For the enoki mushrooms, wash them under running water and trim off the muddy base. Slice the radish thinly (na-bak style). Cut the onion, green onion, and zucchini into bite-sized pieces. Don’t worry about making them too small; slightly larger pieces are fine for stew.

04. Mix the Seasonings: While the vegetables are being prepped, the broth should be ready. Strain 1 Tbsp of doenjang and 1/2 Tbsp of gochujang through a sieve directly into the broth. Whisk well to ensure there are no lumps, which will create a much smoother and cleaner-tasting soup.

05. Cook the Radish: Add the 200g of thinly sliced radish to the broth. Bring it back to a boil over high heat. Cook until the radish turns translucent, which takes about 7 minutes. This step helps to infuse a refreshing sweetness into the broth.

06. Add Main Ingredients and Simmer: Now, it’s time to add the star ingredients: the prepared snow crabs and dried pollock. Add 1 heaping tablespoon of minced garlic and the sliced onion. Start by bringing the stew back to a boil over high heat. Once it boils, reduce the heat to medium and simmer for about 10 minutes to allow the flavors to meld beautifully.
Step 7
08. Final Seasoning and Finishing Touches: After simmering for 10 minutes on medium heat, season the stew with 1 Tbsp of gochugaru (red pepper flakes) and 1 Tbsp of soup soy sauce. Add all the remaining vegetables (zucchini, green onion, cheongyang pepper, enoki mushrooms) except for the crown daisy. Continue to simmer over medium heat for another 5 minutes. For a final aromatic touch, add the crown daisy just before serving. Your delicious and spicy ggotgetang is now ready to be enjoyed!^_^
