Broth Base

  • 5 dried anchovies for broth
  • 2-3 sheets dried kelp (kombu)

  • Approx. 1/2 cup thinly sliced radish
  • 1/2 onion
  • 1/2 stalk green onion
  • 1 Korean chili pepper (cheongyang)

Seasoning

  • 0.3 Tbsp cooking oil
  • 1 Tbsp fish sauce (anchovy or other)
  • 2-3 pinches salt (for seasoning)
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp minced garlic

Cooking Instructions

First, let’s make a delicious broth. Add water to a pot and put in the dried anchovies and kelp. (Removing the insides of the anchovies can result in a cleaner taste.) Simmer over low heat for about 10 minutes to extract the umami from the anchovies and kelp, then remove them, or use a broth bag for convenience.

Prepare another pot and add 0.3 Tbsp of cooking oil to the bottom. Medium heat is ideal for cooking without burning the ingredients.

Peel the radish and slice it into thin squares, about 0.3mm thick. Half a rice bowl’s worth is a good amount. Thin slices cook faster and allow the radish flavor to meld better into the soup.

Slice the 1/2 green onion diagonally. The white part adds a refreshing sweetness, while the green part offers a fragrant aroma.

Add the sliced radish and 1 Tbsp of red pepper flakes (gochugaru) to the pot and stir-fry. Stir-frying the chili flakes beforehand removes any raw taste and enhances the spicy flavor.

Next, add 1 Tbsp of fish sauce (or soy sauce for soup). If you have anchovy fish sauce at home, try using it! It helps eliminate the fishy smell of the squid and adds a deep umami.

Reduce the heat to medium-low and stir-fry for about 2-3 minutes, ensuring the radish, chili flakes, and fish sauce are well combined. Stir-frying the ingredients like this beforehand makes the soup much richer in flavor.

Pour the prepared broth into the stir-fried ingredients. Adding about 800ml of broth will give you a good soup quantity. Feel free to adjust this to your preference.

Once the broth starts to boil after turning up the heat, add the sliced onion. Onions add sweetness and contribute to the refreshing taste of the soup.

When the onions become translucent, add 1 Tbsp of minced garlic. Garlic helps remove any gamey odor from the squid and enhances the soup’s overall flavor profile.
