Today, I’m sharing a fantastic recipe for a ‘Bean Sprout Tofu Tuna Stew’ that’s incredibly simple to make and guaranteed to make you finish your rice in no time. The spicy and refreshing broth is simply irresistible!
Main Ingredients- 1/2 bag Bean Sprouts (approx. 100g)
- 1 block Tofu (approx. 300g)
- 1/2 stalk Green Onion (approx. 50g)
Seasoning & Broth- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 1 Tbsp Minced Garlic
- 2 Cube Stock Packs (or 500ml Anchovy-Kelp Broth)
- 500ml Water (approx. 2 cups)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 1 Tbsp Minced Garlic
- 2 Cube Stock Packs (or 500ml Anchovy-Kelp Broth)
- 500ml Water (approx. 2 cups)
Cooking Instructions
Step 1
First, thinly slice the green onions into bite-sized pieces. These will add a refreshing flavor and aroma to the stew. If you’re using chili peppers, slice them now as well.
Step 2
Rinse the bean sprouts thoroughly under cold running water and drain well. Spread them evenly on the bottom of your pot. This helps reduce any ‘fishy’ smell from the sprouts and enhances the broth’s refreshing taste.
Step 3
Cut the tofu into approximately 1.5 cm cubes or your preferred bite-sized pieces. Arrange the tofu pieces on top of the bean sprouts. Cutting them into larger chunks helps maintain their shape during cooking.
Step 4
Now, it’s time to add the seasonings that will define the stew’s flavor. Add 2 Tbsp gochugaru, 1 Tbsp sugar, 2 Tbsp soy sauce, 1 Tbsp fish sauce, and 1 Tbsp minced garlic to the pot. Pour in 500ml of water to form the base of your broth.
Step 5
Drain the oil completely from the canned tuna. This step is crucial for a clean and non-greasy broth. Place the prepared tuna in the center of the pot, on top of the tofu.
Step 6
Generously arrange the sliced green onions (and optional chili peppers) over the tuna. Finally, drop in 2 cube stock packs for a deep, savory flavor. If you don’t have cube stock, 500ml of anchovy-kelp broth is a great substitute. Now, bring the stew to a boil over high heat.
