Ingredients

  • Well-fermented Kimchi 500g (Aged Kimchi is welcome!)
  • Pork (for stew, neck or belly recommended) 420g
  • Water 5 cups (approx. 1L)
  • Oyster mushrooms 30g
  • Green onion 1 stalk
  • Cheongyang chili pepper 1 (optional, for extra spice)
  • Soup soy sauce or salt, to taste (for seasoning)

First, prepare the pork for the stew. Place the pork in a pot and stir-fry it lightly using its own rendered fat, without adding extra oil. You want to cook it until the surface of the meat starts to change color.

Once the pork is partially cooked, add the kimchi (cut into bite-sized pieces) and stir-fry them together. If using aged kimchi, its sourness will further enhance the stew’s flavor.

Stir-fry the kimchi and pork until they are well combined and fragrant. Continue to stir-fry until the pork’s exterior is lightly browned and the kimchi has softened, which will deepen the savory flavors. Then, pour in 5 cups of water and bring to a boil over high heat.
