Main Ingredients- 1/2 head of well-fermented kimchi
- 1/2 stalk of green onion
- 1/2 onion
- 400g pork (neck or belly recommended)
- 1 Tbsp minced garlic
- 1/2 Korean chili pepper (optional, for adjustable spice level)
Seasonings and Broth- 1 Tbsp beef bouillon powder (or a pack of dried anchovy and kelp for broth)
- 1 Tbsp sugar (adjust based on kimchi’s sourness)
- 2 Tbsp red chili flakes (for color and spice)
- Plenty of beef bone broth or water (enough to cover the kimchi)
- 1 Tbsp beef bouillon powder (or a pack of dried anchovy and kelp for broth)
- 1 Tbsp sugar (adjust based on kimchi’s sourness)
- 2 Tbsp red chili flakes (for color and spice)
- Plenty of beef bone broth or water (enough to cover the kimchi)
Cooking Instructions
Step 1
First, chop the kimchi and pork into bite-sized pieces (about 2-3 cm). If the kimchi pieces are too large, they can be difficult to stir-fry or eat. Dice the onion into approximately 0.5cm cubes. Slice the green onion and chili pepper diagonally.
Step 2
Lightly oil a pot and add minced garlic. Sauté over low heat until fragrant, being careful not to burn the garlic. Add the chopped kimchi and stir-fry over medium heat. Once the kimchi softens and if it’s too sour, add 1 Tbsp of sugar to balance the acidity.
Step 3
When the kimchi is nicely sautéed, pour in enough beef bone broth or water to cover it. Add the pork and bring to a boil over high heat. Using pork cuts with a good amount of fat (like neck or belly) will result in a richer, deeper broth flavor. Skim off any foam that rises to the surface for a cleaner taste.
Step 4
As the pork starts to cook, add the diced onion. The sweetness and aroma of the onion will help neutralize any porky odors and add a savory depth to the stew.
Step 5
Once the pork is fully cooked, add more beef bone broth or water to ensure the kimchi is submerged. Stir in 1 Tbsp of beef bouillon powder and 2 Tbsp of red chili flakes, making sure they dissolve completely. Finally, add the sliced green onion and Korean chili pepper, and let it simmer for a bit longer until the flavors meld beautifully. Taste and adjust seasoning with salt or soy sauce if needed. Your delicious pork kimchi stew is ready!
