Spicy and Savory Braised Beltfish Recipe

Today, we’ll be transforming this wonderful beltfish into a delightful braised dish. The spicy and sweet sauce will beautifully permeate the fish, creating a dish that will have you finishing your rice in no time!
Main Ingredients (Serves 60)- 6kg fresh Beltfish
- 2kg firm Radish
- 1kg fluffy Potatoes
- 3 medium Onions
- 5 Korean Green Chilies (Cheongyang)
- 5 large Green Onions (Scallions)
Seasoning Ingredients- 200g minced Garlic
- 500g coarse Gochugaru (Korean chili powder)
- 100g Black Pepper
- 200ml Mirin (rice wine)
- 200ml Soy Sauce
- 200g Sugar
- 50g minced Ginger
- A pinch of Salt (for adjusting taste)
- MSG-based Seasoning (Dasida, optional)
- 200g minced Garlic
- 500g coarse Gochugaru (Korean chili powder)
- 100g Black Pepper
- 200ml Mirin (rice wine)
- 200ml Soy Sauce
- 200g Sugar
- 50g minced Ginger

Cooking Instructions
Step 1
First, let’s prepare the key to a delicious braised beltfish: the seasoning sauce. In a large bowl, combine 200g of minced garlic, 500g of coarse gochugaru, 100g of black pepper, 200ml of mirin, 200ml of soy sauce, 200g of sugar, and 50g of minced ginger. Mix them well. If you’d like to add more umami, you can also add a bit of Dasida. Lastly, set aside some salt to adjust the seasoning later. Preparing the sauce in advance will make the cooking process much smoother.

Step 2
Now, let’s prepare the vegetables for braising. Cut the firm radish into thick slices, about 1.5 to 2cm thick. Cut the potatoes into similarly sized chunks. Slicing the vegetables thickly ensures they maintain their texture and don’t fall apart during cooking. Place the thickly sliced radish and potatoes at the bottom of your pot. The radish will absorb the sauce and become wonderfully sweet, while the potatoes will cook up fluffy, enriching the overall flavor of the dish.

Step 3
Peel and slice the onions about 0.5cm thick; these will add a lovely sweetness. Arrange the sliced onions on top of the radish and potatoes in the pot. As the onions cook, they will release their natural sweetness, further deepening the flavor profile of the beltfish stew.

Step 4
Arrange the cleaned beltfish pieces attractively on top of the vegetables in the pot. Pour the prepared seasoning sauce evenly over the beltfish. Add thinly sliced ginger pieces over the sauce; this will help eliminate any fishiness from the beltfish and enhance its aroma. Finally, add enough water to about two-thirds cover the ingredients and bring it to a boil over high heat.

Step 5
Once the pot begins to boil, let it simmer on high heat for a moment, then reduce the heat to medium. Cover the pot with a lid and let it braise until the radish and potatoes are fully cooked. This step may take about 15 to 20 minutes. Periodically spoon some of the broth over the ingredients to ensure the seasoning is evenly distributed and to create a more flavorful stew. Continue braising until the radish looks translucent and the potatoes are tender when pierced with a fork.

Step 6
When the radish and potatoes are deliciously cooked, we move to the final stage. Slice the green onions diagonally. Slice the Korean green chilies diagonally to add a pleasant spiciness. (You can add red chilies here too, if you like.) Arrange the sliced green onions and chilies attractively on top of the stew. Bring it back to a boil over high heat for a final simmer. This brief high-heat finish will allow the fresh flavors and aromas of the vegetables to meld beautifully with the stew. At this point, taste and adjust the seasoning with salt if needed.

Step 7
