  • 500g soybean sprouts (prepare a generous amount)
  • 3 Cheongyang chili peppers (add more if you like it spicier)
  • 1 stalk green onion (chopped for a fragrant aroma)
  • 1 handful dried anchovies for broth (this is the secret to deep umami!)

Seasoning Ingredients
  • 1 Tbsp soybean paste (adds a savory depth)
  • 1 Tbsp red pepper paste (enhances the spicy kick)
  • 2 Tbsp red pepper flakes (adjust for desired color and heat)
  • 2 Tbsp seasoned soy sauce (for a rich flavor)
  • 2 Tbsp minced garlic (use plenty for a robust garlic aroma)
  • 1 tsp sugar (adds a touch of sweetness to boost flavor)
  • 2 Tbsp cooking oil (for sautéing)
  • 1 tsp sesame oil (drizzled at the end for nuttiness)

Cooking Instructions

Step 1

First, prepare the anchovy and kelp broth. In a pot, combine 2 cups of water and 1 handful of dried anchovies. Simmer for about 5 minutes to create a clear broth. Remove the anchovies and set the broth aside.

Step 2

In a bowl, mix together 1 Tbsp soybean paste, 1 Tbsp red pepper paste, 2 Tbsp red pepper flakes, 2 Tbsp seasoned soy sauce, 2 Tbsp minced garlic, and 1 tsp sugar. Whisk until well combined to create your delicious seasoning paste. Doing this beforehand makes the cooking process much smoother.

Step 3

Rinse the soybean sprouts thoroughly under running water and drain them well. Pour the prepared anchovy broth into a pot, add the cleaned soybean sprouts, cover tightly with a lid, and bring to a boil over high heat for a short while. Cooking with the lid on helps retain the sprouts’ crispiness and prevents any fishy smell.

Step 4

Once the soybean sprouts have slightly wilted, add all of the pre-made seasoning paste to the pot. Gently toss the sprouts to coat them evenly with the seasoning. Reduce the heat to medium-low and let it simmer until the seasoning is absorbed by the sprouts.

Step 5

After the seasoning has somewhat coated the sprouts, add the chopped green onion and diagonally sliced Cheongyang chili peppers. Continue to simmer together. Be mindful of the heat at this stage to prevent burning and ensure a delicious braised dish.

Step 6

When the sauce has reduced to a thick glaze and the seasoning is well infused into all ingredients, turn off the heat. Drizzle with 1 tsp of sesame oil for a nutty aroma. Your delicious braised soybean sprouts are now complete! Enjoy with a warm bowl of rice.
