  • 160g onion (about half a large onion)

First, wash the chives thoroughly and drain them well. Cut them into approximately 4cm lengths, making them easy to eat. Cutting them to a manageable size ensures the seasoning is evenly distributed and makes them more pleasant to eat.

Prepare about half of a large onion (160g). Peel it and slice it thinly into fine shreds. The crispiness of the onion adds texture and a subtle sweetness to the chive kimchi.

In a large bowl, combine the prepared chives and shredded onion. Add all the seasoning ingredients at once: gochugaru, minced garlic, oligosaccharide, plum extract, anchovy sauce, sand lance fish sauce, and soup soy sauce. (If you prefer less sweetness, you can reduce the oligosaccharide to half a tablespoon.)

Once the seasonings are ready, gently mix everything with your hands. Tip: Adding the perilla oil (or sesame oil) just before serving, after the other seasonings are somewhat mixed, is key to preserving its fragrance. I used homemade perilla oil which had a wonderful aroma; if using store-bought, choose one with a pleasant scent. Finally, sprinkle generously with toasted sesame seeds for a nutty flavor.
