This is a Gochujang stew inspired by Chef Baek Jong-won’s recipe featured on the popular Korean cooking show ‘Housewife Baek Recipe’. It features potatoes and various vegetables, offering a delightful balance of spicy and deep savory flavors that will make you want to finish your rice in no time.
Main Ingredients- 2 medium potatoes
- 1/2 onion
- 1/2 stalk of green onion
- 1-2 Cheongyang chili peppers
- A handful of oyster mushrooms
- 100g beef (stewing cut)
- 1 serving of Kalguksu noodles (optional)
Seasoning & Stir-fry Ingredients- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp sesame oil
- 2 Tbsp cooking oil
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 4 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp fish sauce (myeolchi aekjeot)
- 500ml water (approx. 2.5 cups)
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp sesame oil
- 2 Tbsp cooking oil
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 4 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp fish sauce (myeolchi aekjeot)
- 500ml water (approx. 2.5 cups)
Cooking Instructions
Step 1
First, wash the potatoes thoroughly and cut them into thick, bite-sized pieces (about 2cm). Prepare the oyster mushrooms by trimming the tough ends and gently separating them.
Step 2
Heat a pan over low heat and add 2 Tbsp of sesame oil and 2 Tbsp of cooking oil. Add 1 Tbsp of gochujang. It’s crucial to stir-fry the gochujang gently over low heat without burning it, to extract its chili oil essence. Keep stirring to prevent burning.
Step 3
Once the chili oil starts to appear, add 1 Tbsp of gochugaru and stir-fry for about 10 more seconds. Be careful not to burn the chili flakes. When it starts to foam slightly, pour in 500ml (about 2.5 cups) of water.
Step 4
Now, add the cut potatoes and beef, and bring to a boil over high heat. Once the stew starts boiling, reduce the heat to medium. If you feel the color of the stew is too light, you can add more gochugaru to your preference.
Step 5
As the stew begins to boil, add 1 Tbsp of minced garlic to enhance the umami flavor.
Step 6
Next, add 4 Tbsp of soup soy sauce and 1 Tbsp of fish sauce to season the stew. Adjust the seasoning gradually, and if it’s not salty enough, finish with more soup soy sauce.
Step 7
Generously add the prepared oyster mushrooms. Adding mushrooms will make the stew more refreshing and rich.
Step 8
Finally, add the large-diced onion, chopped Cheongyang peppers, and diagonally sliced green onion. Simmer until all ingredients are cooked through, and your comforting and spicy Baek Jong-won style Potato Gochujang Stew is ready!
Step 9
If you have Kalguksu noodles, cook them in boiling water. Rinse the cooked noodles under cold running water to remove excess starch. Then, add them to the finished Gochujang stew and let it simmer for a moment. This makes for a truly unique and delicious dish. Enjoy this hearty meal with a bowl of rice.
