Irresistible Kimchi Egg Fried Rice
Introducing a special fried rice recipe that elevates the classic egg fried rice by adding well-fermented kimchi for a burst of flavor. Main Ingredients- 2 fresh eggs
- 3 Tbsp well-fermented kimchi (finely chopped)
- 1 Tbsp scallion (thinly sliced)
Seasonings & Aromatics- 1 Tbsp cooking oil (for stir-frying)

- 1 Tbsp oyster sauce (for umami)
- Pinch of salt (to taste, optional)

Cooking Instructions
Step 1
First, heat 1 Tbsp of cooking oil in a pan over medium heat. Add the sliced scallions and stir-fry until fragrant, creating a flavorful scallion oil. This step infuses the fried rice with a deep, aromatic taste. (Takes about 30 seconds) If you are using frozen sliced scallions, stir-fry them over high heat for an additional 5 seconds to eliminate any raw smell. (The amount of scallions in the photo is an example.)
Step 2
Crack 2 fresh eggs into a bowl. Whisk them vigorously with chopsticks for about 20 times until the egg mixture is smooth and well combined. Sprinkle a pinch of black pepper over the eggs. Reduce the heat under the pan to low while you whisk the eggs. (Takes about 5 seconds) If you wish to season the rice before adding kimchi, you can add a tiny pinch of salt to the egg mixture now. However, be mindful of the kimchi’s saltiness.
Step 3
Once the scallion oil is fragrant, add the chopped kimchi to the pan and stir-fry. When the kimchi begins to soften slightly, add your cooked rice (about one bowl or desired amount). Use a spatula to break up any clumps of rice and stir-fry until well combined. As you stir-fry, add 1 Tbsp of oyster sauce to enhance the umami flavor. If you don’t have oyster sauce, you can omit it. While oyster sauce adds great flavor, it can also make the dish salty, so adjust the amount carefully.
Step 4
Continue to stir-fry until all the ingredients are well combined and the fried rice has a appetizing color. The addition of kimchi and oyster sauce results in a glossy and delicious fried rice. Oyster sauce is optional, so feel free to omit it if you prefer a simpler flavor. Taste the rice and add a very small amount of salt only if needed. Serve the finished fried rice hot for the best taste.
