Main Ingredients- 1 bunch young napa cabbage (approx. 500g)
- 5 Tbsp miso paste (homemade or store-bought)
- 5 cups rice water (approx. 1L)
- 1/2 stalk large green onion (scallion)
- 1 Tbsp minced garlic
- 2-3 Korean chili peppers (optional, for extra spice)

Wash the young napa cabbage thoroughly under running water. It’s important to clean it meticulously to remove any dirt or debris. After draining, roughly chop the cabbage into bite-sized pieces, about 5-7cm long, suitable for eating with a spoon. Avoid chopping too small, as it might break apart while cooking.

Pour 5 cups of rice water into a pot and add 5 tablespoons of miso paste. Rice water adds a deeper, more savory flavor to the broth. Stir well with a spoon to dissolve the miso paste completely without clumps. Adjust the amount of miso based on its saltiness.

Bring the rice water with dissolved miso to a boil over medium heat. Once the broth starts to simmer vigorously, add the chopped young napa cabbage, 1 tablespoon of minced garlic, and thinly sliced or chopped large green onion.
