Delicious Kimchi Stew using Canned Saury – A Simple Recipe
Whip up a satisfying and flavorful kimchi stew with just fermented kimchi and canned saury! This recipe is incredibly easy to follow, perfect for beginners, and yields a wonderfully spicy and refreshing dish. Enjoy the rich taste of saury combined with the tanginess of well-fermented kimchi.
Stew Ingredients- 1/2 head of well-fermented kimchi (chopped into bite-sized pieces)
- 1 can of saury (reserve about 1 ladleful of the liquid, separate the saury)
- 1/2 onion (thinly sliced)
- 1 hot green chili pepper (finely chopped, adjust to spice preference)
- 1/2 stalk of green onion (cut diagonally)
- 1/4 block of firm tofu (cut into cubes)
- 800ml water (or rice water)
Seasoning Ingredients- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 2 Tbsp perilla oil (or cooking oil)
- 1 Tbsp sugar (to mellow the kimchi’s sourness)
- 1 Tbsp fish sauce (for a refreshing broth)
- Pinch of salt (to adjust final seasoning)
- 1 ladleful of canned saury liquid (optional, for extra flavor!)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 2 Tbsp perilla oil (or cooking oil)
- 1 Tbsp sugar (to mellow the kimchi’s sourness)
- 1 Tbsp fish sauce (for a refreshing broth)
- Pinch of salt (to adjust final seasoning)
- 1 ladleful of canned saury liquid (optional, for extra flavor!)
Cooking Instructions
Step 1
First, prepare all your ingredients. Chop the kimchi into bite-sized pieces (about 3cm). Thinly slice the onion and diagonally slice the green onion. Finely chop the hot green chili pepper. Cut the tofu into roughly 1.5cm cubes. Open the canned saury, reserve about one ladleful of the liquid, and set the saury pieces aside on a plate.
Step 2
Heat a pot over medium heat and add 2 tablespoons of perilla oil. Add the chopped kimchi and stir-fry for about 3 minutes until it becomes slightly translucent. Then, add 1 tablespoon of sugar and continue to stir-fry for another 2 minutes until the kimchi softens. This step helps reduce any harsh sourness and enhances the umami.
Step 3
Once the kimchi is nicely sautéed, pour in 800ml of water (or rice water) and bring it to a boil over high heat. Once boiling, reduce the heat to medium and simmer for 5 minutes to allow the kimchi flavor to infuse into the broth.
Step 4
Now, carefully add the canned saury pieces to the pot. Stir in 1 tablespoon of minced garlic and the reserved ladleful of saury liquid. (You can omit the canned saury liquid if you prefer, but it adds a richer depth of flavor.) Let it simmer over medium heat for 10 minutes, allowing the saury’s taste to meld with the broth.
Step 5
After the saury has cooked sufficiently, add 1 tablespoon of gochugaru and stir well. Bring it to a simmer again. Next, add 1 tablespoon of fish sauce to season the broth. You can substitute with soy sauce if you don’t have fish sauce.
Step 6
Finally, add the sliced onion, chopped hot green chili pepper, and diagonally sliced green onion to the pot. Reduce the heat to low and simmer for another 5 minutes. The vegetables will add a refreshing sweetness and aroma to the stew.
Step 7
Add the cubed tofu and taste the stew. If needed, adjust the seasoning with a pinch of salt. Simmer for an additional 2-3 minutes after adding the tofu, just long enough for it to heat through without breaking apart. Be careful not to overcook the tofu.
