Main Ingredients
  • 200-300g salted pollack roe (Myeongran-jeot)
  • A little bit of green onion or scallion

Seasoning
  • 1 tsp minced garlic
  • A pinch of gochugaru (Korean chili flakes) for color and mild spice
  • 1 tsp sugar (adjust sweetness to your preference)
  • 1 tbsp sesame oil
  • A sprinkle of toasted sesame seeds

Cooking Instructions

Step 1

Gently rinse the salted pollack roe under running water to remove excess salt. Then, finely chop it or cut it into bite-sized pieces with scissors. Some people prefer to remove the thin outer membrane of the pollack roe, but it’s perfectly fine to leave it on – feel free to prepare it according to your preference.

Step 2

Wash the green onions or scallions thoroughly and pat them dry. Finely chop them into small pieces. It’s best to use both the green and white parts for maximum flavor and fragrance.

Step 3

In a bowl, combine the prepared pollack roe with the chopped green onions (or scallions).

Step 4

Now, add all the seasoning ingredients. Add the minced garlic, gochugaru, sugar, sesame oil, and toasted sesame seeds in order. The amount of sugar and gochugaru can be adjusted based on the saltiness of the pollack roe and your personal taste.

Step 5

Gently mix all the ingredients and seasonings together until well combined. Be careful not to overmix, as this can mash the pollack roe. A gentle tossing motion is recommended. Once it’s perfectly seasoned, it’s ready to serve! Enjoy it with rice or warm, crispy rice soup (Nurungji).
