Spicy and Savory Stewed Pollack and Roe (Dongtae & Goni Jjim)

Today, I made a wonderfully spicy Dongtae and Goni Jjim, perfectly seasoned to my liking! It has a different charm than sweet and savory braised dishes, truly a rice thief. I’ve enhanced the deep flavor by adding fermented soybean paste (cheonggukjang) to the basic seasoning and using salted shrimp for a clean finish. This dish is packed with tender, non-fishy roe and fresh pollock, which is in season right now, making it a hearty meal. Main Ingredients

  • 5 pieces of prepared pollock (Dongtae)
  • 4 pieces of prepared pollack roe (Goni)
  • A piece of radish, thickly sliced

Seasoning Ingredients

  • 1 Tbsp Cheonggukjang (fermented soybean paste)
  • 3 Tbsp Gochugaru (red pepper flakes)
  • 1 tsp Anchovy Dashida (fish stock powder)
  • 2 Tbsp Mirin (or cooking wine)
  • 1 tsp minced garlic
  • 1 cup rice water (approx. 200ml)
  • Salted shrimp (to adjust seasoning)
  • Green onion (chopped)

Cooking Instructions

Step 1

Prepare the pollock and roe by cleaning and trimming them. Slice the radish into thick pieces, about 1cm thick. Having your ingredients prepped makes the cooking process much smoother.

Let’s make the delicious seasoning! In a bowl, combine 1 Tbsp Cheonggukjang, 3 Tbsp Gochugaru, 1 tsp Anchovy Dashida, 2 Tbsp Mirin, and 1 tsp minced garlic. Mix well. Add 1 cup of rice water and stir until the seasonings are dissolved. We’ll use the salted shrimp later to adjust the taste, so keep it separate for now.

Now, to assemble the stew, place the sliced radish at the bottom of the pot. Arrange the prepared pollock and roe attractively on top of the radish. The radish will cook down, adding sweetness to the dish, and it also prevents the fish from sticking to the bottom of the pot.

Pour the prepared seasoning evenly over the ingredients. Make sure to coat everything thoroughly so the flavors can meld beautifully.

Cover the pot and bring it to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer gently for about 15-20 minutes. Cook until the fish is fully cooked and the radish is tender. Taste the stew and add salted shrimp to adjust the seasoning if needed. Finally, add the chopped green onions and simmer for another moment until fragrant. Your delicious Dongtae and Goni Jjim is ready!
