  • 2 Tbsp soy sauce
  • 1/2 Tbsp oyster sauce
  • 1 Tbsp minced garlic
  • A sprinkle of toasted sesame seeds
  • A moderate amount of canola oil

Cooking Instructions

First, wash the eggplant thoroughly and pat it dry. Then, slice it diagonally into pieces about 0.5 cm thick. Avoid slicing them too thinly, as they might break apart during stir-frying. Aim for a moderate thickness for best results.

Peel the onion and slice it into strips. Remove the stems from the Korean green chilies and finely chop them. If you prefer less heat, you can adjust the number of chilies or remove their seeds.

Place the prepared eggplant, onion, and green chilies into a stir-frying pan. Add 2 Tbsp of soy sauce and 1/2 Tbsp of oyster sauce. Gently toss and stir-fry over low heat until the sauce is evenly distributed among the ingredients. Cooking over low heat allows the natural sweetness of the vegetables to come out beautifully.
