Spicy and Savory Stir-fried Rice with Marinated Octopus
A Simple One-Bowl Meal Perfect for a Solo Dining Experience: Stir-fried Rice with Marinated Octopus
Today, I made a simple one-bowl meal, stir-fried rice with marinated octopus 🙂
Ingredients- 1 bowl of rice (warm or cold)
- 2-3 Tbsp marinated octopus (adjust to taste)
- 1/3 stalk of green onion
- 2 Tbsp cooking oil
- 1 egg
- 1/2 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the green onions, which will add flavor to the stir-fried rice. Finely chop both the white and green parts of the green onion. It’s best to chop them not too thickly to create fragrant green onion oil.
Step 2
Heat a pan over medium heat, add 2 Tbsp of cooking oil, and make a fried egg. Cook the egg to your preference, whether it’s runny yolk (sunny-side up) or fully cooked (over-hard). A runny yolk adds a wonderful richness when broken over the rice, and an over-hard egg is also great when you don’t want extra sauce. You can also add a pinch of salt for seasoning if you like. Set the fried egg aside on a plate for now.
Step 3
Use the same pan you fried the egg in. Add the chopped green onions over medium heat and stir-fry until fragrant and lightly golden, creating green onion oil. Once the green onions are golden, reduce the heat to low. Add the marinated octopus and stir-fry lightly to bring out its savory flavor without burning it. If you prefer it spicier, you can finely chop some chili peppers and stir-fry them along with the octopus.
Step 4
Add the warm or cold rice to the pan. Break up any clumps of rice with your spatula and stir-fry until well combined with the marinated octopus and green onion oil. It’s important to stir-fry enough so that each grain of rice is coated with the seasoning.
Step 5
Once the rice and all ingredients are well combined and look appetizing, turn off the heat. Finally, drizzle in 1/2 Tbsp of sesame oil and 1/2 Tbsp of toasted sesame seeds for extra flavor, and give it a light stir to finish. This creates the delicious stir-fried rice with marinated octopus. Place the reserved fried egg on top for an even more satisfying one-bowl meal.
