Instead of preparing multiple side dishes on busy mornings, a hearty stew with plenty of ingredients, like this one, is perfect for enjoying with rice. This recipe simplifies the process by skipping a separate seasoning paste. Instead, it lightly sautés fine chili powder in garlic and scallion oil to create a chili oil effect and uses soy sauce for a clean, balanced flavor, making it easy for anyone to cook a delicious soft tofu stew.

Stew Ingredients

  • Soft tofu (Sundubu) 350g (1 packet)
  • 1 Egg
  • 2 cups Kelp and anchovy broth
  • 90g Canned tuna (1 can)
  • 1/2 Onion
  • 1 Scallion
  • 2 Cheongyang peppers (Korean chili peppers)
  • 1 Tbsp Cooking oil
  • 1 Tbsp Minced garlic
  • 1+1/2 Tbsp Fine chili powder
  • 2 Tbsp Korean soup soy sauce (Gukganjang)
  • Pinch of Black pepper

Cooking Instructions

Step 1

First, heat a pot over medium heat and add 1 tablespoon of cooking oil. Add 1 tablespoon of minced garlic and the white parts of 1 chopped scallion. Sauté until fragrant to create scallion oil.

Once the scallion oil is fragrant, reduce the heat to low. Add 1+1/2 tablespoons of fine chili powder and stir quickly to prevent burning. This step adds a deep, savory flavor to the stew, mimicking chili oil.

Finely dice 1/2 onion and add it to the pot, sautéing until softened and translucent. Next, drain most of the oil from the 90g can of tuna and add the entire can to the pot, stirring to combine with the aromatics. Sautéing the tuna enhances its savory taste.

Carefully cut the top packaging of the 350g packet of soft tofu with the back of a knife, and gently place the entire packet into the stew pot. This method helps maintain the tofu’s soft texture.

Pour in 2 cups of kelp and anchovy broth. Bring the stew to a boil over high heat. Cover the pot and let it boil vigorously.

As the broth begins to boil, use a spoon to break the soft tofu into large, chunky pieces (about 3-4 breaks). Avoid breaking it too small, so you have a pleasant texture when eating.

Once the stew is boiling vigorously, reduce the heat to medium-low. Season the stew with 2 tablespoons of Korean soup soy sauce (Gukganjang) for umami and a balanced salty flavor. You can add more soy sauce to taste.
