Main Ingredients

  • 1 pack prepared bellflower roots (approx. 300g)
  • 1 red chili pepper

Cooking Instructions

Step 1

1. Removing Bellflower Bitterness: Prepare 1 pack of bellflower roots. Place them in a bowl, add 1 Tbsp of coarse sea salt, and vigorously rub them with your hands. This process removes the bitterness and softens the bellflower roots. (Rub for about 3-5 minutes).

2. Rinsing and Squeezing Bellflowers: After removing the bitterness, rinse the bellflower roots thoroughly under cold running water to get rid of the salt. Then, gather the rinsed roots with both hands and squeeze out any excess water. This helps the seasoning to be absorbed better, making the dish tastier.

3. Preparing the Red Chili Pepper: Remove the stem from 1 red chili pepper, shake out the seeds, wash it clean, and thinly slice it. The red chili pepper will add a visually appealing color to your salad.

4. Making the Delicious Seasoning and Mixing: In a clean bowl, combine the squeezed bellflower roots and the sliced red chili pepper. Add all the seasoning ingredients: 1 Tbsp minced garlic, 1 Tbsp sesame seeds, 1 Tbsp gochugaru, 1/2 Tbsp sesame oil, 2 Tbsp plum extract, 1/2 Tbsp vinegar, and 1/4 Tbsp gochujang. Gently mix everything with your hands, ensuring the seasoning is evenly distributed. *For a different twist, you can add thinly sliced green onions, or for added texture, consider adding blanched squid or thinly julienned cucumber.
