Spicy and Sweet Bibim Guksu (Korean Mixed Noodles)

I made bibim guksu easily using the lettuce and chicory I grow, with just seasonings I had in the office.

Bibim Guksu Sauce

  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 2 Tbsp sesame oil

First, let’s prepare the toppings for the bibim guksu. In a bowl, whisk together 2 eggs and 1/4 teaspoon of salt. Ensure it’s well combined.

Lightly oil a preheated pan and pour the whisked egg mixture thinly to cook. Cook until golden brown. It’s best to cook over low heat for even browning.

Once the egg crepe is fully cooked, let it cool slightly, then slice it into three strips and finely mince them. Mincing the egg crepe makes it easier to mix and eat.
